You don’t have to bust out the asiago cheese to enjoy this flowery sparkling wine from Northern Italy. You also don’t have to put La Dolce Vita on in the background while you boil your pasta water. You do, however, have to put capers and red pepper flakes on your orecchiette, and aged balsamic on your broccoli rabe to really coax the fun out of this bone dry, honeysuckle, tart apple prosecco.

The rest of their time is dedicated to still reds and whites but you wouldn’t guess it after one sip of their cremant. Rich layers of brioche and mineral nuance abound, for everything from oysters, to fried chicken to popcorn!
